Can I demand a different vehicle?

I bought my 2020 Jeep Cherokee Trailhawk a few weeks ago. It has been
running poorly since I took it off the lot. Two different Jeep dealerships have
serviced it in 2 weeks. Apparently, the second dealership said there is
coolant in the oil. This requires a new gasket or new engine. I have less than
1,000 miles on my jeep and have only had it a couple weeks. It's still at the
shop and has been for a week. Can I take it back and demand a new
vehicle? I do not want a brand new $40,000 vehicle with a refurbished
engine.

All you can do is document the problems and if it gets bad enough you might have a Lemon Law case.

Right, you won't get a new vehicle, you will have to go through the process of fixing it first.
