Car dies out after driving awhile

My el Camino just got a 5.7 vortec motor put in it but
when I drive it awhile it dies out. I replaced the battery and
checked the alternator and was good. Don't know what
else it could be

Does it seem fuel starved before it dies? Check how the fuel lines are run, not too close to a header or exhaust, which can cause vapor lock.
What year is this motor? Suggest you pull the engine dip stick and check for gasoline contamination before a restart.
The vortec motor didn't come out until the late 1990's so I assume it; carbureted ! ! Are you running a conventsional HEI Distributer ??? I'd start with the distributor replacing the ignition module & then the pick-up & coil , If carbureted I'd put a 1 1/2 spacer /riser under the carb if so equipped which will keep the fuel in the carb from boiling creating a vapor lock condition
You might consider taking a photo of the engine and posting same. An engine id number may also help. We need to know what type of fuel and ignition system is on board.
