Anti-lock light came on in my 2001 Buick Century then turned off

When anti lock light came on we checked brake fluid and it’s fine. After I
started it again later the light was off. What does this mean?

ABS system always tests itself. If the light shuts off it doesn't find fault but if it comes on and off it's an intermittent fault. Knowing the Buick is could be a Wheel Bearing speed sensor failing.

So if it only turned on once and turned off then does that mean it didnt find a fault? Its not blinking on and off or anything. Just came on the once and hasnt turned back on.

Yep, if it didn't find a fault it will shut off. But I'd keep an eye on it and if it remains on I'd definitely get it scanned.
