My car keeps overheating and then going down to normal temperature. Car still runs decent. Only the AC gets warmer when the temp is high. What could this be?

the car going back down to normal temp would be the thermostat opening. have you recharged the freon lately?

Hunter has the answers. Your two issues are not connected. Radiator cooling fans not working properly? Bad thermostat on the fans, or the cooling system thermostat is sticking. Have you checked to see if you have the proper level of radiator fluid? The A/C is an indication the freon is low and needs to be serviced. Worse case on the A/C is the compressor is going bad.
