I have a question.

I have a 2004 F150 XLT SuperCab 4x4, I'm planning
on buying a 2.5" leveling kit and buying new tires
and wheels. Will 35x12.5x17 fit on 17x8.5 with
5.495 backspacing and +18 offset, on my truck
without rubbing? If yes, what setup could I use that
will not rub?

This is where you involve a good tire shop that will take the time to trial fit tires and wheels.

I suggest you do a little research before making any purchase. Tire/wheel diameter should be as close to factory specs as possible. You can use a combo of wheel diameter to tire height to accomplish the look you want but anything tall will affect the handling characteristics of the truck, which has a high center of gravity to begin with. If you go with low height sidewall tires you'll probably destroy the rim if you lose a tire at highway speed.

My concern was with the height of the tire, not so much the width of the tread. But still, you're within to the outer limits Ford recommends.
