03 impala. shows overheat but then goes down on guage. changed thermostat but??? thermostat guage in car goes to red then back down? suggestions?

So rocker screw broke 6 wks ago, repaired.  1 week later, car "overheats".  
radiator cool.  Had mechanic change thermostate.  ok for a few days then,
interior engine guage gets to red, then gets back to normal, both farily
quickly.  drove today.  quick heat up over normal, then quick return to
normal and fluctuation since.  ??? faulty thermostat?  dirty sensor?  Guys
looking at head gasket but oil is clean, no cloudy color.  When reply, please
keep it simple.

auto parts sells a test kit for exhaust in water at radiator fill cap, a damaged head gasket will pump pressure gasses in system and cause an air lock bubble stopping the circulation of coolant , sometimes watching the coolant at fill port, you'll see a bubble of gas every second or two when running

I have a 2003 Chevy Impala 3.8 liter I changed the water pump put another fan in it I put two new elbows and I put a new thermostat I also did some bleeding on it to release Air from the thermostat I flushed out the heater core and she still gets hot from time to time I'm not understanding why she's still getting hot do you have an answer for me please help me
