What would cause the oil gage on a 93 Chevy to spike then immediately return to normal when engine is running?

I've got a 93 Chevy z71 4x4 and the oil gage
spikes all the way up then goes back to normal
position right after. It does it every few minutes
regardless of the temperature outside. But it
doesn't do it when the truck is idling.
