Temperature gauge randomly drops when idle.

Temperature gauge randomly drops when in idle
for to long... when it drops and you turn the car off.  
When you turn it back on it shifts really hard..
thermostat was just changed...

How much of a drop? Maybe this is just because the fans turned on.
