What could happen if the meter leads were connected to the positive and negative terminals of the battery while the meter and leads were set to read amperes?

Nothing will happen if it is set to amperes. Most meters can be damaged by leaving the meter set to ohms and connecting it to a voltage, but some have a fuse that blows to protect them.
