2000 pontiac sunfire

The fan continues to run for
several minutes sometimes I
have to go out 10 minutes
later and restart car and turn
off then the fan will shut off
we change the thermostat
and that didn't work either I
am puzzled

The engine coolant temp sensor (ECT) may be the one that's at fault, as that sends input to the fan controller to run the fan or not. You can remove and test the ECT, to verify it works or not. Youtube will have vids or Google a how to.
